Watch how players respond to mistakes and disagreements, not just greetings. Look for short, specific rules, visible staff presence, clear claim guidance, and quick action on obvious harassment or theft.

Will it feel strict or boring?

Not when it is run well. The strictness is aimed at behavior that ruins other peoples play, while most playstyles are left alone. You still get progression, big builds, and an economy, just without constant hostility.
